Intense and deep, Coffee Ice Cubes added to Baileys take Irish cream liqueur to new heights. They can also be crushed and added to cocktail mixes, or used in iced coffee, for a greater intensity of flavour.
Add the boiling water to the coffee and sugar (if using) in the jug and stir until dissolved.
Set aside and leave to go cold.
Re-stir the cold coffee and carefully pour into the ice cube tray.
Place in the freezer and leave until completely frozen.
This recipe contains strong caffeine and is therefore only suitable for adults.* Note: nutritional information is an estimate & may vary according to portion size/ingredient variants. To avoid caffeine, use instant decaffeinated coffee powder. When added to already sweetened drinks such as Baileys, it is best to make a non-sugar version of coffee ice cubes. A slightly sweetened version may be preferred in iced coffee.
