Eye-catching Granola Pots and Shots with Yoghurt and Berries are an easy to make, healthy treat. They are also pretty enough to serve as a party or dinner party dessert. Light, fruity and delicious. (Optional dairy free & Vegan)
4 to 5tbspyoghurt (dairy free if required)preferably a thick consistency such as Greek Yoghurt or Skyr
3 to 4tbspgranola of choicesuitable to dietary need
6 to 7tbspberries Cut to appropriate size (or alternative appropriate fruit)
maple syrup/honeyOptional (or alternative natural liquid sweetener of choice)
additional nutsOptional (and dependent on granola used)
freeze dried fruit powder Optional - to decorate
Dependent on whether you are making granola pots for dessert, breakfast, a healthy snack or as granola party 'Shots'... Choose appropriate serving glasses/dishes for the number of people eating. Clear glass is best to show the layers.
Prepare the fruit being used - Wash and slice as necessary. For 'Shots' the fruit will need to be small enough to fit easily into the glasses, or cut to an appropriate size. For firmer fruit (such as apples), pre-cook to soften (either by lightly stewing or roasting), possibly with a little cinnamon or ginger.
Gently layer the granola, yoghurt and fruit into the serving glasses as you wish. For 'Shots' in particular, start with a layer of granola at the bottom to give a solid base layer. (Reserve some whole berries to top-dress the pots)
A top layer of yoghurt, can be piped on for extra prettiness (great for 'Shots').
Lightly drizzle with a little honey or Maple Syrup for extra sweetness if preferred (optional).
Top with a whole berry of choice (it helps to nestle into a little yoghurt for stability).
Sprinkle with (optional) freeze-dried fruit powder and/or some extra nuts if using.
