Is it just me, or has everyone had enough of winter? Apparently the UK is having the wettest winter on record………….. It has done nothing but rain for what feels like months and I am wondering whether it will ever stop. If it rains anymore, we are going to need an ark!
The couple of months after Christmas are always for me, the most dismal of the year. Not only do they feel like a real let-down after all the excitement of Christmas, but they have the worst weather and time seems to drag as if spring will never come. It all makes me feel very grumpy……….
In an effort to inject a bit of summery hopefulness into my life, I made a sorbet this week. Not any old sorbet, but a tropical one…………….. made with mango, pineapple, lime, baobab and coconut cream, it is bursting with tropical sunshine and the perfect pick-me-up to scare away the winter blues.
I discovered Baobab last year back in May when I was at the Free-From Show in London, being sold by a company called Aduna. I have used it previously in another sorbet recipe which you will find posted here, along with some information about its properties, origins and flavour. It is really quite an amazing food with one of the highest anti-oxidant capacities of any fruit in the world……………… absolutely what is needed to get you through winter, and an extra boost alongside the tropical goodness in the rest of the fruit.
This sorbet is intense and delicious. It packs a truly fruity punch………….. both sweet and sharp at the same time, refreshing and wakening the taste buds with every mouthful. The sweet mango is the first and most predominant flavour that hits you, although this is sharpened with a definite contrast of lime, pineapple and baobab. As the sorbet melts and mingles, the smooth creaminess and distinct flavour of the coconut comes through, lingering on the palate as you anticipate the next spoonful.
The texture of this sorbet is less icy than some, tempered by the coconut cream, which adds a luxuriant smoothness and tropical aroma promising warmer days and lots of sunshine.
Take a mouthful and close your eyes…………….. imagine the waves lapping on the shore and the wind breezing through the palm trees…………….. the warmth of the sun on your skin………… Mmmmmmm…………… Winter? What winter?
Tropical Sorbet (makes 750 ml)
- Puree all the ingredients together in a liquidizer until well blended.
- Place in the fridge until completely chilled.
- Churn using an ice cream maker by the manufacturers instructions.
- When the ice cream is done, spoon into an airtight container and place in the freezer to allow to harden, although you may wish to serve soft straight away.
