Gluten Free Gingerbread Waffles (Spiced Christmas Waffles)
Perfectly-spiced gluten free Gingerbread Waffles that are crisp on the outside with a soft, fluffy middle. These Christmas Waffles make a perfect seasonal breakfast or brunch, but they’re so good, you should eat them all year 😉. Optional dairy free.

Gingerbread Waffles made gluten free and PERFECT
I can’t get enough of my new gluten free Gingerbread Waffles! They’re crisp, yet soft, perfectly spiced and utterly delicious! I created them as a ‘Christmas Waffle’ special… But to be honest, they’re so good they’ll be on my breakfast (and dessert) list all year!
These babies are quick and easy to make, safe for people with Coeliac Disease (Celiac) and can be made dairy free. But since no one would ever guess they are ‘free from’, you can confidently feed them to the whole family and visiting guests. Actually, I’ve been told by wheat-eaters that they are better than the standard waffles they usually eat. I’ll take that!

Ingredients for making gluten free Christmas Waffles
Gluten Free Flour Blend
Gingerbread waffles that are Coeliac-safe must be made with a gluten free flour blend. The brand you choose is flexible (any favourite baking blend is fine), but I make them with Gluten Free Alchemist Rice Free Blend B. Find the recipe for Blend B in my Gluten Free Flour Blends post). Because it contains no rice and is packed with wholegrain goodness, the waffles have a better nutritional profile and no grittiness!
Baking Powder
Baking powder helps the waffles rise and puff, making them light and tender. Make sure the baking powder is gluten free.
If you use a commercial flour blend, feel free to go ‘self-raising’ and leave out the baking powder.
Spices
Nothing says ‘gingerbread’ or ‘Christmas’ like some warming exotic spice. So these waffles are made with a carefully balanced blend of ginger, cinnamon, allspice, ground cloves, nutmeg and vanilla. If you don’t have all of them, use what you’ve got (as long as there’s a good dose of ginger and cinnamon as the base).
In addition to the spices, I add a little salt… Salt is a great flavour enhancer and helps to bring to the fore all the other delicious flavours in the recipe.
Sugars
Gingerbread waffles need a little sweetness… And just like gingerbread, that sweetness comes from darker varieties of sugar. Specifically, the recipe uses a combination of soft light brown and soft dark brown sugars.
I tested the addition of liquid molasses (black treacle), as this is used (in part) to sweeten gingerbread cookies. However, the resulting waffles lacked crispness and had a bitter undertone. The balance of light and dark brown granular sugars creates the perfect texture and flavour without undermining their depth and ‘gingerbread’ status.
Eggs
For perfect fluffiness (and better nutrition) these gluten free Gingerbread Waffles are made with eggs. Eggs also support structure and rise. The eggs I use are UK Large size. (To compare egg size where you are, check my International Guide to Egg Size and Weight comparison chart).
The eggs are separated into whites and yolks before being added to the batter… The yolks are simply whisked into the batter, while the whites are pre-whisked to soft peaks before folding through.
The waffle batter can be made without separating the eggs and simply beating whites and yolks as one into the mix. However (having tested both processes), the waffles are not as crisp or as fluffy using the ‘all in one’ method. If you have time and an extra bowl, I definitely recommend whisking your whites for the best waffles!
Milk
As with any standard recipe, Christmas waffles use milk in the batter. The milk can be either dairy or dairy free.
Melted Butter
Melted butter offers richness of flavour and also helps the waffles cook up crisp and delicious. If you can’t eat dairy, use a good dairy free alternative such as Flora Plant B+tter or Stork or Naturli vegan baking blocks.

Making coeliac-safe Gingerbread Waffles
When making Coeliac-safe Gingerbread Waffles, it’s essential to check that all ingredients are free from hidden gluten or cross-contamination risk. Read labels to check there are no ‘may contain warnings’, particularly for the baking powder, spices and flour. If you are new to checking labels, my page on Coeliac Disease + Food should help.
However, because they are made in a waffle machine or waffle iron, it is equally essential that this too is 100% clean of any crumbs or residue that might have been left behind from cooking wheat-based waffles in the same machine.
Nonetheless, you can use any waffle machine to make gluten free Christmas Waffles… square, round, shallow or deep. I use a Sage No Mess Waffle Maker, which I love. And yes… I’m grateful every time I use it for the moat!

How to serve Gingerbread Waffles
Serve Gingerbread Waffles as breakfast, brunch, dessert or as a sweet treat at any other time of the day. They are delicious drizzled with Maple syrup or honey and topped with a spoon of whipped cream and a sprinkle of chopped hazelnuts. Add some fresh figs on the side for an extra seasonal treat.
Alternatively, they work beautifully with fresh, peeled orange segments. Or even a drizzle of dark chocolate sauce.
All waffles are best served freshly made. However, if you want to present them as a larger batch, set them in a toast rack (to prevent them from going soggy) and pop them in a low oven (to keep them crisp) while you make as many as you need.

Can Gluten Free Christmas Waffles be frozen?
Yes. Although they are always at their best fresh from the waffle maker, Christmas Waffles can also be frozen and reheated.
Cool them completely (preferably in a toast rack or propped against something so they don’t get soggy). Once cold, layer with baking paper and wrap in an airtight bag or container before freezing for up to 2 months.
To defrost and reheat: Toast from frozen either in the toaster or under the grill (turning a couple of times for best crispness).

Gingerbread Waffles

Ingredients
Dry Ingredients
- 200 g gluten free flour blend I use GFA blend B – See NOTES (other standard blends also work well)
- 2½ tsp baking powder (gluten free)
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- ¼ tsp allspice
- â…› tsp ground cloves
- â…› tsp ground nutmeg
- big pinch fine sea salt
- 70 g soft light brown sugar
- 30 g dark brown sugar
Wet Ingredients
- 2 large eggs – Separated (UK large (Canadian ‘Extra Large’; Australian ‘Jumbo’; and US ‘Extra or Very Large’))
- 280 g milk (or dairy free alternative)
- ½ tsp vanilla extract/paste
- 80 g butter (melted) – or dairy free butter alternative
Instructions
- Weigh and mix together all the dry ingredients in a large mixing bowl. Set aside.
- Whisk the egg whites in a VERY clean bowl (with clean whisk heads) until they form soft peaks – Set aside while mixing the rest of the batter. Do not wash the whisk yet!
- Add the egg yolks, milk, and vanilla to the flour and, using the whisk, blend together until smooth.
- Add the melted butter and fold through until combined.
- Gently fold the whisked whites into the batter.
- Cook the waffles using a waffle maker/waffle iron according to the manufacturer’s instructions. Be careful not to overfill the iron (about half-fill) or the mixture will spill out the sides (the waffles will puff up).
- Serve fresh and hot with whipped cream and maple syrup or honey and perhaps a sprinkling of chopped roasted hazelnuts and some fresh figs.
